Looking for a way to increase your intake of the green goodness that is kale? This recipe is one of the most delicious things you can do with kale! Super quick and easy, you can use as pasta sauce, dip, spread on crackers, in wraps or just cut to the chase and eat straight from the container you’re storing it in!
1/4 cup walnuts
1/4 cup pine nuts
2 cloves garlic
Zest and juice of half a lemon
3 tablespoons of olive oil (or oil of choice)
Himalayan salt and pepper to taste
Large bunch of kale (I used about 10 leaves, stems and all)
Toast your walnuts and pine nuts in a fry pan with a little olive oil
Once toasted, turn the heat down and add lemon juice, zest and garlic and stir for a minute or so
